Back when I was working 50 miles from home, I went out for lunch nearly every day. A cute little restaurant opened by a young lady that was a wonderful cook. She'd create these wonderful pasta dishes, salads and sandwiches that would make your mouth water just thinking about them.
After a few months of trying out everything she made, I finally asked for the recipe of her grilled chicken. She didn't mind sharing at all. ( It wasn't long after she opened, she was offered a position as a chef in a bigger city and moved away.)
This is a recipe that you will turn to over and over because it's that good!
Here it is.....
Use boneless/skinless chicken breasts
Pour Ken's Creamy Caesar Dressing on the chicken enough to coat from and back
Place the coated chicken breasts on a heated grill, or George Foreman or a very hot skillet ( use a little bit of real butter in the skillet, just to coat bottom of pan)
Sprinkle a lot of garlic powder and just a little dried basil on top of the chicken
After it cooks for a few minutes I turn the chicken over and sprinkle the spices on the other side
About halfway through cooking, I start cutting the chicken breasts into smaller chunks to use in a salad. A spatula will cut the tender chicken just fine.
Let the chicken get golden brown, but not over-cooked, place pieces on paper towels.
While the chicken is cooking you can prepare your favorite items together for a tossed salad, or cook pasta or rice to serve the chicken with.
