The incredible egg, going nighttime

Caught an episode of Alton Brown's Good Eats the other night. It was on the art of the classic French omelete -- and using it as a dinner feature.

We'll sometimes have "breakfast" for dinner in our house. Mix things up a bit with bacon and eggs and biscuits. But Brown's presentation of an omelete aux fine herbes paired with a salad and a glass of white wine gave the idea some elegance.

Here's a video (scroll down a bit on this link to find it) of the fabulous teacher and chef Jacques Pepin demonstrating a classic French omelete. Gorgeous presentation, and if Pepin's hard to understand (that French accent) his directions are easy to follow. The result: perfection.

We had omeletes for breakfast the next morning. Fab. U. Lus.
