Easter leftovers

You know you'll have 'em: Leftovers from this weekend.

Here are some tips for working your way through a mountain of ham.
BAKED PENNE & HAM
Prep Time: 10 minutes Cook Time: 33 minutes
Makes 4 servings
1 can (10 ¾ oz.) Cream of Celery Soup
1 ¼ cups milk
3 cups cooked penne pasta (2 cups uncooked)
1 ½ cups shredded fontina cheese
2 cups French Fried Onions
1 cup diced boiled ham
1/3 cup chopped oil-packed sun-dried tomatoes, drained
½ cup frozen peas, thawed

Heat oven to 375 F. Combine soup and milk in 2-quart shallow casserole dish. Stir in pasta, 1 cup cheese, 1 cup French Fried Onions, ham, tomatoes and peas.
Bake, uncovered, 30 minutes or until hot. Stir.
Top with remaining cheese and onions. Bake 3 minutes until cheese melts and onions are golden.

Leftover potatoes can make a great shepherd’s pie.
HEARTY SHEPHERD’S PIE
Prep Time: 10 minutes Cook Time: 27 minutes
Makes 6 servings
1 ½ lbs. ground beef
2 cups French Fried Onions
1 can (10 ¾ oz.) Tomato Soup
½ cups water
2 teaspoons Italian seasoning
1 package (10 oz.) frozen mixed vegetables, thawed
3 cups hot mashed potatoes

Preheat oven to 375. Cook meat in large oven-proof skillet until browned: drain. Stir in one cup Fried Onions, soup water and Italian seasoning. Season to taste with salt and pepper.
Spoon vegetables over beef mixture. Top with mashed potatoes.
Bake for 20 minutes or until hot. Sprinkle with remaining French Fried Onions. Bake 2 minutes or until golden brown.

Extra mashed potatoes can create a delicious creamy dish!
CREAMY MASHED POTATO BAKE
Prep Time: 5 minutes Cook Time: 35 minutes
Makes 6 servings
3 cups. Mashed potatoes
1 cup sour cream
¼ cup milk
¼ tsp. garlic powder
1 1/3 cups French Fried Onions, divided
1 cup shredded Cheddar cheese, divided

Preheat oven to 350. Combine mashed potatoes, sour cream, mild and garlic powder.
Spoon half of mixture into 2-quart casserole. Sprinkle with 2/3 cup ® French Fried Onions and ½ cup cheese. Top with remaining potato mixture.
Bake 30 minutes or until hot. Top with remaining 2/3 cup ® French Fried Onions and ½ cup cheese. Bake 5 minutes or until onions are golden.
